Our Herbs
ROSEMARY and SAGE
These herbs are widely spread and grow spontaneously in our fields; they offer a great variety of use throughout the year.
IN THE KITCHEN
Rosemary Flat bread
Take 500g of bread dough, and add 3-4 spoons of oil, some salt and the chopped leaves of2 rosemary sprigs.
Knead dough well, roll it out with a rolling-pin and place it into a greased and floured baking-tray.
Cut a grid into it with a sharp knife and stick some rosemary sprigs here and there. Prick it with a fork and sprinkle some coarse salt on it.
Bake in a preheated oven at 200° for about an hour.
Take it out of the oven, lift it off the baking-tray, then serve it hot and cut into big slices.
Sage pancakes
Rinse and dry well 30 sage leaves, then make a soft batter with 100g of flour, 1 egg, half a glass of bier and a pinch of salt.
Dip the sage leaves into the batter holding them by the stem and fry them in hot oil in a frying pan until browned. Drain on paper towels.
Spread the still warm leaves with 50g of grated Emmental cheese.
JUST FOR THE HEALTH OF IT
Rosemary Infusion (stimulating and tonic)
Let 10-20g of rosemary leaves brew in a mugful of boiling water for 15-20 minutes.
Drink 2 cups a day, preferably before main meals (it boosts bile secretion).
Sage Infusion (poor digestion)
Boil 15-25g of chopped sage leaves in a litre of water for 5 minutes.
Filter and drink a cup after main meals.
CURIOSITY
The "Four Thieves Vinegar"
During the terrible plague epidemic that struck Toulouse in 1630 a group of thieves plundered the ill people houses. When the thieves got caught, the authorities asked them how they could break into several infected houses without contracting the illness. They answered they would only reveal their secret on the understanding that their lives would be spared. It was a poultice of sage leaves with rosemary, thyme and lavender.
In that case it can be said that the “herbs” were real life-givers.
Ever since then an aromatic vinegar was produced all over France with the above mentioned ingredients – called the "Four Thieves Vinegar" – that was supposed to protect from infectious diseases.
